Our story
Xiquita Restaurante y Bar is an ancestral Mexican kitchen that honors the techniques, ingredients, and traditions that have shaped Mexican cuisine for generations. Inspired by the richness of Mexico City and the diversity of its regions, our work begins with nixtamal—an ancient process that transforms heirloom corn into masa, the living foundation of our menu.
Every element of the kitchen reflects a philosophy of respect for the ingredient. Whole-animal butchery, preserved harvests, and a commitment to using every part of what we prepare guide our daily practice. Trimmings become sauces, ashes season broths, fats are rendered into cooking mediums, and overlooked ingredients find new purpose. This continual transformation reflects generations of Mexican ingenuity, where nothing valuable is wasted.
Our dishes present these traditions with clarity, allowing the ingredients and techniques to speak for themselves. Alongside the kitchen, a bar centered on mezcal and agave spirits celebrates the landscapes and communities from which they come.
